Banana bread seems to be very popular in these times. I don’t know if its because everyone is trying to make sure they don’t waste any food or because banana bread is just THAT popular. But when I first arrived at my parent’s house, that was the first thing my dad requested that I make. I had to wait a week or so for the bananas to ripen and then I forgot about them. Thankfully, my mom had stored them for me, so they were ripe and ready for baking when I decided to make chocolate chip banana bread this week.
Although I’ve made banana bread before, I haven’t perfected it like a few other things I love to bake; until now. The chocolate chip banana bread I made this week is AMAZING. It was so good and so moist that my dad has requested that I make another one next week. Sounds like someone is addicted.
Here’s the recipe below for Chocolate Chip Banana Bread.
- 1 1/3 cup flour
- 2-3 ripened bananas
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
- 1/2 cup sour cream (or 2% Greek yogurt)
-
Preheat oven to 325 degrees F and grease your loaf pan.
-
In a bowl, whisk together the flour, baking soda, and salt.
-
In a separate bowl, mix together the butter and sugars for 2-3 minutes.
Add in the mashed bananas followed by the eggs, yogurt (or sour cream) and vanilla.
-
After you've mixed all the wet ingredients, fold in the dry ingredients. Then add in the chocolate chips.
-
Pour the batter into the loaf pan and top with any leftover chocolate chips.
Bake for 1 hour to 1 hour 15 minutes or until the toothpick comes out clean (with the exception of a few moist crumbs).
-
Let it cool, then store in an air-tight container.
I hope you enjoy this bread as much as my family and I have. And if you make it, please let me know; I’d love to see your pictures.
