This recipe for White Chocolate Strawberry Pie has to be one of my favorite desserts to make. The first time I made it, I was a little nervous about my strawberry layering skills, but I impressed myself so much, I had to share this recipe. And since National Pi Day is tomorrow, what better way to celebrate than with actual PIE.
For the record, I used a store-bought pie crust because I did not have time to make a homemade crust, but this recipe does include instructions if you wanted to make the crust yourself. However, if you are short on time like me, the store-bought crust worked perfectly.
The key to layering the strawberries is to start on the outer edge and work your way to the center.
It’s a little bit of work, but look how pretty it is when it’s all done.
- 1 1/2 cup graham cracker, crushed into crumbs
- 5 tbsp butter, melted
- a pinch of salt
- 12 oz cream cheese, softened
- 2 cups powdered sugar
- 1 cup white chocolate chips
- 1 1/2 tbsp orange juice, fresh (if possible)
- 2 cups Cool Whip
- a pinch of salt
- 1 lb strawberries, thinly sliced
- 3 tbsp white chocolate chips
Take a package and a half of graham crackers and put them in a plastic freezer bag. Use a mallet or hammer to crush them into crumbs. (If you have a food processor, use that to make this process very easy.)
Once the crackers are in crumbs, pour the crumbs into a bowl. Pour the melted butter over the crumbs and add the pinch of salt. Use your fingers or a spoon to mix the butter and salt into the crumbs.
Pour the crumb mixture into a pie dish. Use your fingers or a measuring cup to firmly press the crumbs into the dish to form the crust. Repeat this step until you have formed a crust on the sides and bottom of the dish.
Beat the cream cheese until its smooth. Add 2 cups powdered sugar and mix until the two are well combined.
Add the Cool Whip and orange juice to the mixture.
Using a double boiler, fill the bottom pot about 1/4 full with water and bring to a boil. Reduce the heat to a simmer and fit the top pot into the bottom pot. Pour 1/2 cup white chocolate chips into the small pot. Continue to stir the chocolate until it has melted. (If you don't have a double boiler, you can use two pots, small and medium-sized.)
Add the melted chocolate and dash of salt to the cream cheese mixture and mix well until it becomes smooth and creamy.
Then, carefully add the cream cheese mixture into the pie crust.
Wash and thinly slice a pound of strawberries. Then lay them on top of the filling. This works best if you start on the outer edge and work your way to the middle.
Melt the last 3 tablespoons of white chocolate and drizzle it over the strawberries. Place the pie in the fridge to chill for 1 hour before serving.
